pumpkin seeds 2 ways

Pumpkin seeds have so many health benefits and are such a fun fall snack! Here are 2 of our favorite ways to flavor them!


Cinnamon Maple Pumpkin Seeds

ingredients:

- 1 cup pumpkin seeds (pepitas also work)

- 1 tablespoon maple syrup

- 1 teaspoon cinnamon

- 1/4 teaspoon vanilla extract


instructions:

- preheat oven to 325°

- line baking sheet with tin foil

- mix pumpkin seeds, maple syrup, cinnamon and vanilla extract in a bowl

- spread the pumpkin seed mixture in an even layer on the baking sheet

- place in oven and bake for 4-6 minutes (you have to keep a close eye on them to make sure that they don't burn)

- take out of oven and cool

- place in bowl, sprinkle with cinnamon and enjoy :))



Mexican Lime Pumpkin Seeds

ingredients:

- 1 cup pumpkin seeds (pepitas also work)

- 1/2 tablespoon coconut oil

- 1 teaspoon lime juice

- 1 teaspoon Tajin seasoning (if you don't have this, you can add a 1/4 teaspoon of paprika and/or Chile powder)

- 1/4 teaspoon of garlic powder

- 1/4 teaspoon of onion powder

- pinch of salt


instructions:

- preheat oven to 325°

- line baking sheet with tin foil

- mix the pumpkin seeds, coconut oil, lime juice, tajin (or paprika/Chile powder), garlic powder, onion powder and salt

- place in oven and bake for 4-6 minutes (you have to keep a close eye on them to make sure that they don't burn)

- take out of oven and cool

- place in bowl and enjoy!
